PERUVIAN — Light Roast


Peruvian coffees are often referred to as consistent, mellow, and smooth with mild acidity. Sourced from the northern, high-altitude regions of Peru, this roast highlights notes of nutty chocolate. Paper filter in a drip coffee maker? No problem! This roast finely ground and brewed in a pour over, will recalibrate your definition of smooth coffee.

GUATEMALAN — Medium Roast


Our Guatemalan heirloom coffee from the Nahuala region features sweet, clean and bright aromas of hazelnut. The flavor is rich, with notes of chocolate, citrus and roasted nuts, and a super smooth finish. Best brewed as a finely ground pour over, or a medium grind through metal screen/filter.  

PERUVIAN — Dark Roast


Peruvian coffees are delicately sweet and round, with a low level of acidity. Our Peruvian coffee is lightly sweet and fragrant, with a discreet but vibrant acidity. Simply put, this is our most versatile coffee. It’s perfect for a range of brew methods, from a robust single origin espresso in the classic northern Italian style or a cup with sweet additions out of a french press.



The trademark “Swiss Water Process” removes caffeine from the coffee without the use of solvents or chemicals, so you never have to worry about how your decaffeinated coffee was processed. The taste also delivers, with a combination of subtle sweetness, gentle acidity, and round flavor that make it perfect for roasting and brewing as either an espresso or drip brew.

What’s Fluid Roasting and Why Do We Do It?

Early on in our roasting journey, we fell in love with fluid bed roasting, which allowed us to learn how to roast on a small scale. We made a lot of mistakes and learned a lot. This learning translated to installing bigger roasters as we grew. What really captured our attention was how smooth and consistent the roasted coffee was—it was never burnt, regardless of how dark we roasted.



The art of roasting is a big part of coffee. A great bean can be made (or not) by the roaster. We like art, but we also love science. Our roasting profiles produce consistently delicious coffee – every time. Each bean varies from region to region and farm to farm; each has its own unique qualities. We experiment with the beans from our Café Femenino producers and dial in the exact roast prfiles to bring out the best flavors. Once dialed in, each profile is digitally-programmed to ensure that you are getting the same quality in every bag of Saw-Dog Coffee you order, every time.

A Few Words About Cafe Feminino

While women have always been crucial to coffee production, men traditionally held the economic power. In 2004, 464 female coffee producers in Peru united to change this dynamic and take a step toward empowerment. They decided to separate their coffee production from men to gain visibility and a voice inside their community. Working in partnership with OPTCO, they developed a never-before-existing market for women-produced coffee to serve as an important vehicle for social change and the empowerment of poor, marginal-ized women coffee farmers. Since then, the Café Femenino movement now includes thousands of women farmers from nine countries across the world.

Café Femenino requires participating cooperatives to give their women farmers control of revenues, land ownership, and acknowledgement for their exceptional coffee. With economic control in their hands, the women farmers of Cecanor have used Café Femenino funds to invest in community betterment projects including children’s libraries, schools, health and nutritional education, and programs that build self-esteem, human rights awareness, and literacy.
